So I made two loaves by hand (!)
We've mostly been eating home made bread. The store bought stuff has so many extra ingredients and I don't trust their percentage of whole wheat. The bread maker would make this so easy - pop the ingredients into the bowl and in a little less than four hours - bread!
Granted, the texture was more sandwich than artisanal, but if you work until 5 pm a bread maker saves you from pepperidge farm corn syrup.
And it tasted much better.
So when confronted with a stubborn machine I turned to a whole wheat recipe from Martha.

(sorry can't figure out how to embed link from the iPhone)
Aside from the fact that the online recipe is missing the key ingredient of 1 1/2 cups ww flour, I thought it turned out very well. Kneading was soothing, it rose as expected, and it tastes like something from whole kibble.
I'm still planning on finding a replacement bread maker, but maybe I'll make more by hand now.
